The dreadful question that haunts me every Friday is “what’s for dinner?” What’s for dinner on the last day of the week when you are probably so tired from all those activities and work? Your brain tells your body to slow down, to take a rest. My favourite thing to do on Fridays is to have quick and easy meal, have a shower and watch Better Home and Garden. Ah, good time.
This yummy tart can be prepared in advance, lightly bake then freeze. Then you can just take it out from the fridge, there is no need to defrost, put in the oven for 25 minutes at 175 degree Celsius. Dinner is ready in no time.
Ingredients:
To make the shortcrust pastry, you will need:
1 ¾ cup flour
½ cup self raising flour
1 egg
1 table spoon milk
1 pinch of salt
For the tart, you will need:
2 eggs
1 ½ cups coarsely grated cheddar
30 gr feta, crumbled
2 tablespoon sour cream
200gr slices ham
salt and pepper to season
10 cherry tomatos
Method:
Shift flour and self-raising flour into mixing bowl, add a pinch of salt.
Whisk egg with 1 table spoon of milk, slowly pour into the flour while mixing under the mixer using dough hook. Add a tablespoon of cold water if needed. The dough should be worked well for about 5 minutes, until it forms a ball off the mixing bowl and is soft and smooth to touch. Let the dough rest for 30 minutes in the fridge, then roll the dough into half centimetre thick. Use the rolling pin to wrap the dough around, lift up into the tart tray. Trim away excess pastry.
You can use ready made shortcrust pastry if you don’t want to make your own pastry.
Whisk the sour cream and 2 eggs in a bowl. Season with salt and pepper. Mix in cheddar and crumbled feta.
Cut half of the ham into small pieces, combine into mixture. Pour mixture into the tart base.
Cut the other half of ham into strips, lay on top of the tart into diamond pattern. Cut cherry tomatoes in half and place onto middle of each diamond, cut side up.
Lighly brush edge of pastry with egg. Bake for 20 minutes at 175 degree Celcius until golden.
