Vietnamese beef jerky (Thịt bò khô)

Beef jerky is a popular snack in Vietnam. I love the its flavor: hot chili, fragrant lemongrass, five spice, pepper… to name a few. Squeeze some lemon juice on top and serve with a cold beer; you can’t just stand up from the table without finishing the very last bit. Delicious!

Ingredients:

  • 600gr beef
  • 2 tbsp. oyster sauce
  • 1 tablespoon lemongrass, finely chopped.
  • 1 tablespoon garlic, finely chopped. (or 1 teaspoon garlic powder)
  • 1 teaspoon black pepper
  • 3 teaspoon salt
  • 1 tablespoon paprika
  • 1 tablespoon five spice powder
  • 1 tablespoon chili flake

Method:

Cut the beef into 1cm thick slices. You should cut along the grain if you want to achieve long strips of beef jerky later.

Combine all other ingredient into a paste. Add in the beef. Give it a good massage.

Refrigerate over night (10-12 hours) to marinate.

Bring to room temperature.

Cook beef in a pot on medium flame until slightly cooked. Remove from heat. Place beef on a tray and cook in the oven at 120 degree C for 1 hour.

Remove from oven. Beef should be quite dry and tender. Shred beef into strip. Put back in the oven until totally dry.

 

Note: You don’t need the best cut for beef jerky. On contrary, the cheaper cut often taste better because it adds more “texture” to the dish.
